Spring Dining

We gathered Fiddleheads on our walk yesterday. Fiddleheads are the buds of a fern plant & they are edible. They must be picked in Spring while they are still young & before the fern matures. The boys and I decided to cook them as an appetizer with dinner.

First you boil the Fiddleheads for 10 minutes

Then saute them in butter & garlic for about 5 minutes

Reid enjoyed cooking them

Clayton enjoyed eating them!

Yummy couscous salad

A perfect Spring meal

Thank you to my sweet mother-in-law
for making this great apron for me- love you!

This looks so good! We'll have to try it. Gee, I think I need to go something to eat now.

So creative! And yummy looking. I have tried the tops of devils club and it tastes like fresh green beans right out of the garden. I'm wondering what that is that you made.

Bethany- I have not tried devil's club yet. It sounds interesting though! I want you to show me how to do it.
